Low Carb and Dairy Free Hot Chocolate

Super decadent and delicious dairy free and low carb hot chocolate that also tastes amazing as a chilled chocolate milk.

Ingredients

  • 4 cups water
  • 1 cup milk of choice - coconut almond, soy, oat, etc.
  • 1/3 cup cacao powder
  • 1 teaspoon cornstarch
  • 1 tablespoon water
  • 1 tablespoon vanilla extract
  • 1 cup monk fruit sweetener
  • pinch of salt
  • (optiona1/4 teaspoon coconut oil or ghee- this makes it really decadent but isn't a necessity

Instructions

  • In a heavy bottomed pot add water, milk of choice, cacao powder and bring to a boil.
  • While mixture is coming to a boil then mix together the cornstarch and water in a small bowl.
  • Whisk in the cornstarch and water and boil for 1 minute then reduce to a simmer.
  • Add vanilla extract, monk fruit sweetener and pinch of salt and stir.
  • Let it cool to a drinkable temperature and enjoy!
