Corn and Chili Salsa

Easy to make corn and chili salsa that's delicious on any of your favorite foods you would normally add salsa.

Ingredients

  • 1 tablespoon oil - I used corn oil
  • 1 cup corn
  • 4 ounce can of fire roasted chilies
  • 1 tablespoon cilantro - diced
  • 1 teaspoon lime juice
  • 1/4 teaspoon chili powder
  • pinch of salt
  • 1 tablespoon cojita cheese

Instructions

  • In a pan, add oil, corn and fire roasted chilies and stir until corn cooks and starts to brown slightly.
  • Remove from heat and add cilantro, lime juice, chili powder, salt and cojita cheese.
  • Serve warm or cold.
