Ingredients
2cupsold fashion oats
1/2cupgluten free baking mix
1tablespoonbaking powder
1/2teaspoonsalt
1/2cuphoney
3eggs
1/4cupbutter - melted
1cupmilk
1cuppure pumpkin puree
2teaspoonpumpkin pie spice
2teaspooncinnamon
1/2cupsugar
optional - 1/2 cup chocolate chips
Optional - 1/2 cup pecans or walnuts
Instructions
Preheat oven to 350 F.
In a blender or food processor add oats, gluten free baking mix, baking powder, salt, honey, eggs, butter, milk, pumpkin puree, pumpkin pie spice, cinnamon and sugar and blend or pulse until the batter is smooth and blended well.
If adding chocolate chips and/or nuts, fold into batter.
Grease a standard sized bread pan and pour batter in.
Bake for 1 hour or 1 hour and 5 minutes. If top begins to brown, cover with aluminum foil to prevent burning on the top.
Insert a toothpick into the center of the loaf and when it comes out clean it is cooked.
