Gluten Free Pumpkin Blender Bread

Delicious soft and hearty pumpkin spice bread with the most amazing texture!

Ingredients

  • 2 cups old fashion oats
  • 1/2 cup gluten free baking mix
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup honey
  • 3 eggs
  • 1/4 cup butter - melted
  • 1 cup milk
  • 1 cup pure pumpkin puree
  • 2 teaspoon pumpkin pie spice
  • 2 teaspoon cinnamon
  • 1/2 cup sugar
  • optional - 1/2 cup chocolate chips
  • Optional - 1/2 cup pecans or walnuts

Instructions

  • Preheat oven to 350 F.
  • In a blender or food processor add oats, gluten free baking mix, baking powder, salt, honey, eggs, butter, milk, pumpkin puree, pumpkin pie spice, cinnamon and sugar and blend or pulse until the batter is smooth and blended well.
  • If adding chocolate chips and/or nuts, fold into batter.
  • Grease a standard sized bread pan and pour batter in.
  • Bake for 1 hour or 1 hour and 5 minutes. If top begins to brown, cover with aluminum foil to prevent burning on the top.
  • Insert a toothpick into the center of the loaf and when it comes out clean it is cooked.
  • Allow to cool completely before slicing.
