Black Bean Salad

Delicious, quick and healthy salad! Perfect for lunch or dinner!

Ingredients

  • 3 cups loosely packed spinach - I usually just grab 3 hand fulls
  • 1/2 avocado - chunked
  • 1/4 cup red onion - diced
  • 1/2 cup black beans
  • 1/4 cup salsa
  • 1 to mato - sliced
  • 1/4 cup Anaheim chili pepper - diced
  • 1 teaspoon dried oregano
  • Cilantro lime vinaigrette, cilantro lime yogurt dressing or dressing of choice

Instructions

  • In a large bowl, add spinach, avocados, black beans, salsa, tomato, Anaheim chili peppers and sprinkle with dried oregano.
  • Top with cilantro lime dressing or dressing of choice.
  • Enjoy!
