Honey Pecan Banana Bread

Ingredients

  • 3 bananas - ripe and peeled
  • 1/2 cup brown sugar
  • 1/2 cup honey
  • 1/2 cup butter - melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon cinnamon
  • 1 1/2 teaspoons salt
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1 cup milk
  • 1 tablespoon lemon juice
  • 1/2 cup pecan pieces - mixed in or half mixed in and half on top or all nuts on top.

Instructions

  • Preheat oven to 350 F.
  • In a mixing bowl, combine bananas, brown sugar, honey, butter, eggs and vanilla and blend until smooth.
  • Combine milk and lemon juice then add to banana mixture.
  • Add cinnamon, salt, flour baking powder and blend until batter is smooth.
  • If mixing pecans into bread then add half of them into the batter or if keeping them on top then wait on adding them.
  • Pour batter into a greased bread pan and sprinkle top with pecans.
  • Bake for 1 hour and 15 minutes or until a toothpick can be inserted and come out clean.
  • Cover the top with aluminum foil if it begins to brown too quickly.
  • Allow bread to cool before removing from pan and slicing.
