Pellet Grill Cornbread

This cornbread is delicious and the perfect summer or all year long side dish.

Ingredients

  • 1 cup flour
  • 1 cup corn meal
  • 2 teaspoons baking powder
  • 2 teaspoons salt
  • 3/4 cup sugar
  • 2 tablespoons honey
  • 1/2 cup butter
  • 1 cup sour cream
  • 3 eggs
  • 1 cup milk
  • Optional:
  • 1 cup corn that has been cooked in a pan with 1 tablespoon butter until golden and slightly caramelized

Instructions

  • Preheat pellet grill to 350 F.
  • Grease a 12 inch cast iron skillet or equivalent baking pan.
  • In a mixing bowl, add flour, corn meal, baking powder, salt, sugar, honey, butter, sour cream, eggs, milk and corn if using it.
  • Mix well then pour into pan and bake on the grill for 30-35 minutes or until the cornbread is baked through in the center.
