2cupsquick oats or old fashion oats - old fashion oats will make them a little heartier and toothsome
Instructions
Prepare a cookie sheet with parchment paper or just lay down parchment paper on the counter.
In a pot, add sugar, corn syrup, water and heat mixture up and stir until the sugar dissolves.
Add cocoa powder, peanut butter and salt and cook until mixture thickens slightly and starts to pull away from the bottom of the pan, this doesn't take very long and mixture will still be pretty liquid, it will firm up when it cools. If it seems too cooked add a little more water and turn heat down.
Add vanilla and oats and take off the heat and stir well.
Spoon cookies onto parchment paper and let them cool until they set.
I love to eat them extra cold so I chill them in the refrigerator.
