Apple Walnut Matafan

Ingredients

  • 1/4 cup milk
  • 1 tablespoons salted butter
  • 3/4 cup flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/4 cup sugar
  • 2 large eggs
  • 1/2 teaspoon vanilla
  • 1 large apple - sliced into thin slices then slice those slices into 3rds any apple will work
  • 1/4 cup chopped walnuts
  • 1 tablespoon butter - for skillet
  • 2 tablespoons powdered sugar - for top
  • 1 teaspoon ground cinnamon - for top
  • Maple syrup - optional

Instructions

  • Core apples then slice into thin slices then cut those slices into 3rds so you have thinly sliced apple chunks. This will help them cook faster and be easier to eat.
  • Heat the milk and butter in the microwave or in a sauce pan until butter melts.
  • In a small bowl, mix together the flour, baking powder, salt, cinnamon and nutmeg.
  • In mixing bowl, add eggs and sugar and blend together.
  • Add vanilla to the egg mixture and blend.
  • Add the flour mixture and blend until smooth then add the milk mixture and blend until smooth.
  • Add the apples and walnuts to the batter and mix in.
  • Heat a 10 inch non- stick skillet on medium low heat and add butter to pan. I also spray a little cooking spray just to ensure I don't have any sticking.
  • Pour batter into the skillet and cover skillet with a lid.
  • Reduce heat to low and cook covered for about 4 minutes or until sides begin to cook and little bubbles form at the top.
  • Using a spatula flip the cake over in the pan and continue cooking for roughly 5 minutes or until the cake is cooked all the way through.
  • Slide onto a serving platter and sprinkle top with powdered sugar and cinnamon.
  • Add maple syrup if desired.
