Oatmeal Cream Pies

Soft, chewy and delicious oatmeal cream pies!

Ingredients

  • 1/2 cup butter - softened
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 cups old fashion oats
  • 2 cups flour
  • 1 cup brown sugar
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon molasses
  • frosting:
  • 1/4 cup butter
  • 1 1/2 cups powdered sugar
  • 6 ounces marshmallow cream
  • 1 teaspoon vanilla extract
  • 2 teaspoons water
  • pinch of salt

Instructions

  • Preheat oven to 375 F.
  • Add oats into a food processor or blender and roughly blend.
  • Pour mixture into a mixing bowl and flour, brown sugar, sugar, baking soda, salt, cinnamon and nutmeg and mix well.
  • Add molasses, butter, vanilla and eggs and blend mixture until dough comes together.
  • Roll dough into round balls and place on a parchment paper lined cookie sheet.
  • Bake for 10-12 minutes and then cool while you prepare the frosting.
  • To make the frosting; blend all ingredients together and blend until smooth, add more water to thin if desired.
  • Pipe frosting into middle of cookies and sandwich with another cookie.
  • Enjoy!
