Plum Vinaigrette

Simple and delicious plum based vinaigrette.

Ingredients

  • 1 large plum - pit removed but skin still attached
  • 1/4 cup red wine vinegar or vinegar of choice
  • 1 tablespoon honey - if you like a sweeter vinaigrette then add 2 tablespoons
  • 1/4 cup olive oil
  • Pinch of salt
  • Pinch black pepper

Instructions

  • In a small sauce pan, add plum, red wine vinegar, honey, olive oil, salt and pepper and bring mixture to a boil. reduce to a simmer. The plum will cook down and the skin will release it's color.
  • Remove from heat and remove the skin of the plum.
  • Chill then use.
  • Keep refrigerated.
