Ingredients
4green or under ripe tomatoes
1/2cupflour or gluten free baking mix
dash paprika
1/2teaspoonseasoned salt
dash of cayenne pepper
dash of black pepper
1/2cupfine corn flour or corn meal
1/2cuppanko bread crumbs or gluten free bread crumbs
1/4cupmilk
2eggs
1/4teaspoonsriracha or hot sauce of choice
1/4cupmayonnaise
1/2teaspoonsrirachaoptional - this adds a little kick, reduce or leave out of you want a spice free dipping sauce
1/2teaspoonWorcestershire sauce
dash of cayenne pepper
1/2teaspoonwhite vinegar
dash onion powder
dash back pepper
1/2teaspoonhoney
Oil for frying - I love using corn oilit can handle higher temperatures or your preferred frying oil
Instructions
Slice your tomatoes into roughly 1/3 inch slices.
Get out 3 bowls.
In one bowl, add flour, paprika, seasoned salt, cayenne pepper and black pepper and stir together.
In another bowl, add milk, egg and sriracha or hot sauce, whisk together.
In the last bowl, add corn flour and panko or gluten free bread crumbs.
Dip tomato slices into flour mixture, followed by egg mixture then into panko and corn flour mixture, It's okay if it doesn't stick to all sides/skin sides of tomatoes.
Finish breading all tomatoes and lay flat on a piece of parchment paper or a dish.
In a large frying pan, add enough oil to fill about 1/3 to 1/2 inch deep, we are shallow frying these not deep frying so there is no need to fill the pan too full.
Heat oil until a little test piece of corn flour brings up bubbles or when it's around 350 F. to 375 F., if you don't have a thermometer you can also place a kernel of popcorn in the oil and when it pops it's ready, reduce heat of it starts smoking and remove from heat before adding tomato slices.
Add tomato slices and cook until it's golden brown on the one side then flip over and finish cooking the other side until it looks the same.
To make the sauce, add all ingredients and whisk together.

To make in an air fryer: Follow steps 1- 7 then, use a perforated air fryer liner or parchment paper with holes in it, this is optional and not necessary. However, it will help the batter from falling through the little holes or getting caught when you remove the tomato slices. Spray each side of the tomato with a little oil and place in air frying basket so they are not touching each other. Cook on 375 F. for 6 minutes then carefully flip over tomatoes and cook another 7-9 minutes or until they are golden brown.
