Quick Horchata

My kids love horchata and so do I! This quick horchata takes out the rice soaking step and makes this authentic tasting horchata drink come together quickly! I use rice flour instead of whole grained rice. It cooks fast and gives the drink it’s signature rice flavor. You can find rice flour in most grocery store isle. Make sure it is pure finely ground rice and not a mixture of flours. Bob’s Red Mill makes some. I also find it at the Indian food store and you can also find it online.

My kids love the amazon prime show “Just Add Magic”. I’ll admit that even though it’s a kids show, so do I! Maybe it’s the cooking they do in the show that draws me in or the magical fun spirited mysteries they are figuring out. At any rate, we have watched the seasons again and again. They have an episode in the first season where they make horchata that makes the character sing everything until you drink the very last drop. My kids ask me for horchata every time we watch that episode. This quick horchata comes in handy because I can whip it up in the time that they watch the next episode.

What you need to make quick horchata:

makes ~ 1/2 gallon

Instructions

  1. In a medium sauce pan, Add 3 cups milk, cinnamon, rice flour and sugar and whisk over medium high heat.
  2. As the mixture heats up, the mixture will thicken. keep whisking the mixture so it doesn’t burn on the bottom.
  3. Once it thickens remove from heat and whisk in the remaining 5 cups of milk.
  4. Chill in the refrigerator, about 30 minutes.

*If you don’t want to wait for the mixture to chill you can pour over ice but it will water the mixture down a bit.
