Stuffed Manicotti

This tasty stuffed manicotti is one of my kids favorite meals! “Can we have this every night mom!?!?” is what I often hear during dinner when this is served. They love to help me make it too and it’s so fun to see them in the kitchen learning and having a good time!

My kids will probably always feel at home in the kitchen, it’s where we spend a lot of our time together. In fact, if I am not in there you can hear frantic screams of “mom! where are you!” coming from the kitchen. I recently took my kids on a field trip to a pioneer museum and it made me giggle and also a little proud when my 2 year old naturally gravitated towards the little play kitchen they had set up. She loves to cook for me on her toy kitchen at home and loves cooking with me in the real kitchen even more.

So here’s what you need for this easy and delicious stuffed manicotti:

Instructions

  1. Preheat oven to 350 F.
  2. Boil manicotti noodles until they are al dente.
  3. In a pan, add ground beef, Italian seasoning, garlic powder and salt and cook until beef is all cooked.
  4. Add 1-1/2 cups spaghetti sauce and mix into meat.
  5. Add cottage cheese and 1/2 of the cheddar and mix again.
  6. Spoon filling into each manicotti shell. You can fill a large ziplock bag with the meat mixture and snip a big end off one of the corners and pipe the mixture into the shells to make stuffing them easier.
  7. Place the stuffed noodles in a glass baking dish and cover with spaghetti sauce and sprinkle with cheese.
  8. Bake for 20 minutes. Serve.
