Healthier Peanut Butter Cookies

I am in love with these cookies, the texture, the chew, and the flavor! These are my favorite peanut butter cookie out of all the peanut butter cookies I have eaten in my life. You guys that is a big statement! I grew up with some amazing peanut butter cookies! I also love the fact that I can eat them without my blood sugar going through the roof and causing instant regret. My kids love them too and you really can’t tell they are healthier in any way.

These healthier peanut butter cookies are is a dairy free recipe and can easily be made gluten free by using a gluten free baking mix in lieu of the flour. The combination of almond flour and Stevia cuts the carbohydrates in this recipe to about 1/3rd of the total carbohydrates that would be in traditional peanut butter cookies and you honestly can not taste the lack of carbs! I told you they are my favorite peanut butter cookie out of all the peanut butter cookies!

What you need to make healthier peanut butter cookies:

Makes 24 cookies

Instructions

  1. Preheat oven to 375 F.
  2. Add almond flour, flour, baking soda, sugar, stevia and salt and stir together.
  3. Add peanut butter, eggs and vanilla extract and stir until a cookie dough forms.
  4. Form into 24 balls and place on a parchment paper lined cookie sheet.
  5. Press down on each cookie with a fork, then crossing the other way with the fork to form a grid shape on top.
  6. Bake for 8 minutes. Let cool slightly before moving to a cooking rack.
  7. Enjoy!

  • 1/2 cup flour gluten free baking mix will work as well
  • 1 teaspoon baking soda
  • 1/2 cup sugar
  • 1/3 cup stevia sugar cane blend
  • 1/2 teaspoon salt
  • 1/2 cup peanut butter
  • 2 eggs
  • 1 tablespoon vanilla extract
