Honey Sriracha Roasted Carrots

I’m a sucker for a good roasted carrot! This honey sriracha roasted carrots recipe makes the perfect dinner side dish! Great for Easter, Thanksgiving and Christmas. Buy rainbow carrots and it makes for the perfect St. Patrick’s day dinner side dish! I would serve it along side some smoked corned beef brisket and some smashed golden potatoes.

These carrots are not overly spicy but have a really subtle kick to them. They get caramelized from the butter, honey and soy sauce and they are just downright tasty!

What you need to make honey sriracha roasted carrots:

Serves 4-6 people

Instructions

  1. Pre-heat oven to 425 F.
  2. Peel and remove the tops from the carrots.
  3. Place the carrots on a lined metal baking sheet.
  4. In a small bowl, combine melted butter, soy sauce, sriracha, honey and olive oil and mix together.
  5. Pour over the tops of the carrots and roll the carrots in the sauce so they are all covered.
  6. Bake for 50 minutes turning over after 35 minutes.
  7. Remove from oven and serve.
  8. Enjoy!

  • 2 pounds whole carrots
  • 2 tablespoons Butter
  • 1 teaspoon soy sauce
  • 1/2 to 3 teaspoons Sriracha depends how spicy you want them - 1/2 teaspoon isn't spicy, 3 will have quite a kick
  • 1 tablespoon Honey
  • 1 tablespoon olive oil
  • Sprinkle of salt
