Double Chocolate Oat Blender Muffins

Delicious double chocolate oat blender muffins! My kids love these and I love making them because they super easy! They are filled with wholesome goodness too. They make perfect quick breakfasts or snacks after school or work.

The sugar in the recipe can be adjusted to preference, I wrote this recipe on the sweeter end because my kids usually want a sweeter muffin but you can make it less. I will often add half Truvia and half sugar so it’s half the sugar but not everyone likes the taste of stevia so use whatever sugar or sugar replacement you like.

These can be frozen and pulled out the day you want to eat them, either let them thaw naturally or microwave them for 10 seconds. I have found they freeze for about 1 month before they get a little freezer taste and start to dry out.

How to make these double chocolate oat blender muffins:

Makes 24 standard sized muffins

Instructions

  1. Preheat oven to 350° F.
  2. Add all ingredients except chocolate chips into blender and blend on high until well mixed.
  3. Pour into muffin liners until about 3/4 of the way full.
  4. Sprinkle chocolate chips on top of muffins.
  5. Bake at 350° for 15 to 18 minutes.
  6. Check muffins with a toothpick and once it comes out clean they’re done.

  • 1 1/4 cup all purpose flour
  • 1/3 cup dark chocolate cocoa powder
  • 1 1/2 cups sweetener of choice - sugar monk fruit, truvia, coconut sugar, etc.
  • 2 tablespoons butter
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 2 cups milk of choice
  • 1 cup Greek yogurt
  • Chocolate chips for topping
