Healthy Apple Cinnamon Blender Muffins

Healthy apple cinnamon blender muffins! These are healthy, delicious and easy peasy! You make them in your blender, so it’s a throw in and blend kind of recipe. They can be easily made gluten and dairy free when you use gluten free baking mix and non-dairy milk of choice!

What you need to make healthy apple cinnamon blender muffins:

makes ~ 24 muffins

  • 1 and 1/2 cups dry steel cut oats
  • 1 cup almond flour
  • 1/2 cup flour or gluten free baking mix
  • 2 eggs
  • 1 tsp baking soda
  • 1 tsp lemon juice
  • 2 cups milk of choice
  • 1/4 cup brown sugar
  • 1/2 cup stevia
  • 1 tsp salt
  • 2 teaspoons cinnamon
  • 1 cup shredded apple

Instructions

  1. Pre-heat oven to 350 F.
  2. Add steel cut oats, almond flour, flour or gluten free baking mix, eggs, baking soda, milk, brown sugar, stevia, salt, cinnamon and lemon juice to the blender and blend until smooth.
  3. Shred apple.
  4. Place muffin liners into a muffin tin.
  5. Pour the batter into each muffin tin and add ~ 2 teaspoons shredded apple on top of the batter. Sprinkle with a little more cinnamon.
  6. Bake for 20 minutes.
