Blackberry Lime Sour Cream Cake

This blackberry lime sour cream cake is a perfect summer cake with blackberries baked into the moist and tender cake that has lovely hues of lime mixed in.

It’s a fuss free cake to make and great with the blackberry lime frosting or I have an option to top it with a blackberry lime cheesecake frosting.

I love blackberries and so do my kiddos, I have to tell you that whenever I plan to make any baked goods with berries, I have to hide them so I have enough to use in the baked good. Once my kids discover we have them it is game over and they will be gone within a few minutes.

This cake has sour cream in it to ensure it bakes up moist. I however can confirm that it can be overbaked, So when baking it, make sure to keep an eye on it so it doesn’t over bake. I would rather have a slightly under baked cake over an overbaked on any day.

Makes 1 – 8 x 8 cake or 18 Cupcakes

For the Blackberry Lime Sour Cream Cake

Instructions for the cake:

  1. Preheat oven to 350 F.
  2. In a mixing bowl, add lime zest or lime oil, sugar, butter, eggs, sour cream, lime juice and blackberry flavoring (if using) then mix well.
  3. Add flour, baking powder, salt and milk then mix well.
  4. Gently stir blackberries into batter.
  5. Pour into a greased or lined cake pan or lined cupcake tins.
  6. Bake cake for ~ 40 minutes or until cake is risen in the center and a toothpick comes out clean.
  7. If baking cupcakes: Bake for ~ 18 minutes, press on center of cupcake and if it gently springs back then it is done.
  8. Let cake cool completely before frosting.

Blackberry Lime Frosting: (printable recipe card is below)

To make the blackberry lime frosting:

  1. In a mixing bowl, add butter, powdered sugar, salt, sour cream, lime juice, blackberry flavoring (optional) and blackberries and blend together until frosting is smooth and mixed well.
  2. Add more powdered sugar for a thicker frosting or more milk for a thinner glaze.
  3. Frosting cooled cake and enjoy.

Blackberry Lime Cheesecake frosting: (printable recipe card is below)

To make the blackberry lime cheesecake frosting:

  1. Add softened cream cheese, butter, sour cream, lime juice, whipping cream, vanilla pudding and blackberry flavoring (optional), then using a mixer with a whisk attachment, beat together until a smooth mixture forms.
  2. Add powdered sugar, salt and blackberries and blend together until smooth.
  3. Let frosting chill in refrigerator for ~20 minutes or until it thickens enough to be used as a frosting.
  4. Add more cream to thin frosting and more powdered sugar to thicken frosting.
