Easy Brownie Ice Cream Cake

This easy brownie ice cream cake is just that, easy!! AND SO delicious! I make it for birthdays because let’s be honest, birthdays are super busy, expensive and overwhelming. So any recipes that can be made ahead of time, without a lot of effort or added costs are my jam! If you are here at this post, I am assuming it’s your jam too!

I am all for homemade brownies, in fact, I have quite a few recipes for them on my website but I also equally love boxed brownies! They are chewy, flavorful, delicious and easy to make! Win, win, WIN in my book. So this recipe uses boxed brownies, store bought ice cream, premade whipped cream and store bought chocolate syrup! I looks fancy and labor intensive but it’s secretly not and It’s a whole lot cheaper to make than buying a premade ice cream cake!

It can be made way ahead of time too! in fact, you could make it 3 months in advance and it would still be perfect for the occasion as long as it’s stored correctly in the freezer. Not that I am recommending that but it would work!

Since you and I have places to be and fun to do, lets get to this recipe and enjoy some sweets sooner rather than later, shall we?

What you need to make this easy brownie ice cream cake:

Makes 1 cake – serves 10

  • 1 brownie mix – any brand or favorite type will work as long as it’s around 18 ounces
  • 1 carton vanilla ice cream – 48 ounces
  • whipped cream – pre-made ready whipped cream is fabulous
  • crushed Oreo cookies – roughly 12 cookies or however many you want
  • chocolate syrup – favorite store bought chocolate syrup

Instructions

  1. Preheat oven to temperature listed on your brownie mix box.
  2. Mix up brownie mix according to package directions.
  3. Line a cookie sheet with parchment paper or grease really well. I usually do both because I hate brownies that stick to the pan.
  4. Pour batter onto sheet and spread out over the whole cookie sheet.
  5. Bake for roughly 20 minutes or until the brownies look baked through.
  6. Allow brownies to cool completely.
  7. Divide brownies down the middle so you have 2 even sides.
  8. Cut the side of the ice cream container so the whole block of ice cream is exposed.
  9. Place ice cream on a cutting board and cut ice cream into ~2 inch slabs then place onto one of the brownie halves, pressing the ice cream as close together as you can, so you have minimal gaps in the ice cream.
  10. Lift the other side of the brownie and place on top of the ice cream.
  11. Cover with plastic wrap and freeze until you are ready to serve.
  12. When ready to serve, add premade whipped cream, crushed Oreo pieces and chocolate syrup on top of the brownie cake, slice and enjoy!
