Ingredients
4medium sized potatoes - redgolden or russet potatoes all work great
2tablespoonssalted butter
8tablespoonssour cream
Generous pinch of salt
pinchof pepper
1/2cupshredded cheese - cheddar or a cheddar blend
Bacon bits - optional
Green onions - diced - optional
Sausage or ham pieces - optional
Instructions
Wash potatoes and slice each potato in half. Note that depending on the space in your air fryer and the size of your potatoes, they can be sliced either horizontally or vertically to accommodate the air fryer.
Place into air fryer and cook on 400 F. for 20 minutes.
There will be a crisp skin on top of the cut, it's fine and will mix into the potato mash.
Use a oven mitt or towel to hold hot potatoes, as you scoop out the centers with a spoon. You can leave some potatoes attached to the sides if you need to for structure. If using a thinner skinned potatoes like reds you may want to leave a little potato on the edges.
Place all of the potato centers into a mixing bowl with a paddle or whisk attachment or you can manually smash these with a potato masher or fork.
Add butter, sour cream, salt and pepper to the mixture and blend until smooth and well mixed.
Scoop the mixture back into each potato and sprinkle tops with cheese, bacon, green onions and any desired toppings.
Return to air fryer tray and bake at 400 F. for another 3 minutes.
