Air Fryer Twice Baked Potatoes

I love twice baked potatoes and these air fryer twice baked potatoes have everything I love about the traditional version but they take less than half the time to make! On a busy night, I am all about time saving methods of cooking!

These potatoes are cooked in the air fryer then the centers are scooped out, mixed with butter, sour cream, salt and pepper and whipped until nice and fluffy. That mixture then goes back into the potato skins and then they get topped with cheese, bacon, and any other toppings you love and baked for a few minutes until the cheese melts. That means you get to enjoy these baked potato, mashed potato hybrids after only 23 minutes of bake time.

They are completely drool worthy and the perfect side dish! I love to serve them with a crockpot roast or pan fried chicken that I can make while these baking in the air fryer.

Here are a few recipes that may go great with these:

What you need to make Air Fryer Twice Baked Potatoes:

Serves 4 people

  • 4 medium sized potatoes – red, golden or russet potatoes all work great
  • 2 tablespoons salted butter
  • 8 tablespoons sour cream
  • Generous pinch of salt
  • pinch of pepper
  • 1/2 cup shredded cheese – cheddar or a cheddar blend
  • Bacon pieces or bits- optional
  • Green onions – diced – optional
  • Sausage or ham pieces – optional

Instructions

  1. Wash potatoes and slice each potato in half. Note that depending on the space in your air fryer and the size of your potatoes, they can be sliced either horizontally or vertically to accommodate the air fryer.
  2. Place into air fryer and cook on 400 F. for 20 minutes.
  3. There will be a crisp skin on top of the cut, it’s fine and will mix into the potato mash.
  4. Use a oven mitt or towel to hold hot potatoes, as you scoop out the centers with a spoon. You can leave some potatoes attached to the sides if you need to for structure. If using a thinner skinned potatoes like reds you may want to leave a little potato on the edges.
  5. Place all of the potato centers into a mixing bowl with a paddle or whisk attachment or you can manually smash these with a potato masher or fork.
  6. Add butter, sour cream, salt and pepper to the mixture and blend until smooth and well mixed.
  7. Scoop the mixture back into each potato and sprinkle tops with cheese, bacon, green onions and any desired toppings.
  8. Return to air fryer tray and bake at 400 F. for another 3 minutes.
  9. Remove from air fryer and enjoy!
