Baked Brie With Honey Pears

Brie with pears, honey and optional toasted walnuts baked in a buttery and delicious pastry dough.

Ingredients

  • 1/4 cup walnuts pieces - optional
  • 1 1/2 cups flour
  • 1 tablespoons sugar
  • 1 teaspoon salt
  • 1/2 cup salted butter – chunked cold
  • 3-4 tablespoons ice cold water – add water and mix until dough pulls together
  • For the filling:
  • 1 pear – peeled cored and sliced
  • 2 tablespoons honey - plus a drizzle more for garnish
  • 8 ounces brie - skin left on or cut off depending on preference
  • 1 tablespoon walnuts - optional
  • pinch of salt

Instructions

  • Preheat oven to 400 F.
  • Mix together your walnut pieces, flour, sugar and salt.
  • Add cold butter chunks to the flour mixture and cut in with a pastry cutter, fork or your hands until pea or larger sized butter pieces are found.
  • Add in the cold water as you mix until dough comes together into a ball.
  • Roll out dough into a large circle or rectangle (personal preference on the shape) and lay on a parchment paper lined cookie sheet.
  • Add 1 tablespoon of honey then brie, with or without the rind on, it's fine to eat but if you don't like it then trim it off.
  • Add the other tablespoon of honey to the top of the brie round followed by the sliced pear, walnuts and pinch of salt.
  • Fold dough around the sides of the cheese and pears.
  • Bake for 25 minutes or until dough gets slightly golden or feels cooked when pressed on and cheese gets nice and melted.
  • Remove from the oven and drizzle with warm honey.
