Instant Sausage, Kale and White Bean Soup

No soaking of the dried beans required! Just add them and all soup ingredients to the instant pot and they will cook to be perfectly tender and delicious.

Ingredients

  • 1 pound ground sausage
  • 1 white onion - diced
  • 1 bunch of flat leaf kale - about 6 leaves
  • 2 tablespoons olive oil
  • 1 tablespoon garlic - minced
  • 1 pound dried small white beans
  • 4 cups water
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • dash of cayenne pepper
  • 4 cups chicken broth or stock
  • 1 tablespoon garlic and herb seasoning
  • 1 bay leaf
  • dash of paprika - optional

Instructions

  • Add everything into the instant pot, break up your sausage into chunks.
  • Cook on high pressure for 30 minutes or on the beans setting.
  • Do a quick release on your instant pot, my beans are perfect at this point but if you find yours are too firm, return to pressure and cook for another 5 minutes.
  • Stir soup, break up sausage if you want smaller chunks, served and enjoy!
