Instant Pot Sausage, Kale and White Bean Soup

This instant pot sausage, kale and white bean soup is a delicious, flavor packed soup that cooks up in just about 40 minutes. No soaking is required for the beans and they get nice and tender!

The kale also breaks down good in this recipe and can handle the pressure from the pressure cooker because it’s a hearty green so it turns out buttery soft!

I first bought an electric pressure cooker about 9 years ago when I heard they could cook an artichoke in 7 minutes! I remember telling my friends about how amazing they were but it wasn’t until Instant pot started selling them that they really got some attention. Genius marketing by instant pot! My old and trusty electric pressure cooker finally bite the dust a year ago when the lid fell off the counter and it broke, it probably will still work but I didn’t want to risk the whole intense pressure thing with a broken lid so I bought an instant pot.

I used it all the time just like I did my electric pressure cooker and I love all the option buttons on them. I still however, cook old school style with them where I select the high pressure and my selected amount of time. Which is what I have done for this recipe. You can use the bean setting on this recipe or manually add in 30 minutes of cook time, it’s the same and works both ways. I also added the manual time so that anyone who is still rocking an electric pressure cooker will know how long the beans setting is.

What you need to make instant pot sausage, kale and white bean soup:

serves 6

  • 1 pound ground sausage
  • 1 white onion – diced
  • 1 bunch of flat leaf kale – about 6 leaves
  • 2 tablespoons olive oil
  • 1 tablespoon garlic – minced
  • 1 pound dried small white beans
  • 4 cups water
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • dash of cayenne pepper
  • 4 cups chicken broth or stock
  • 1 tablespoon garlic and herb seasoning
  • 1 bay leaf
  • dash of paprika – optional

Instructions

  1. Add everything into the instant pot, break up your sausage into chunks.
  2. Cook on high pressure for 30 minutes or on the beans setting.
  3. Do a quick release on your instant pot, my beans are perfect at this point but if you find yours are too firm, return to pressure and cook for another 5 minutes.
  4. Stir soup, break up sausage if you want smaller chunks, served and enjoy!
