Ingredients
1cuponions - minced
1cupcelery - diced
1/2poundbacon -chopped into chunks
2tablespoonssalted butter
Pinchsalt - more to taste
1/4teaspoonblack pepper - more to taste
Dash cayenne pepper
2tablespoonsflour
16ouncesclam juice
2 - 6.5ouncecans minced clams - juice included
5ouncesboiled baby clams - juice included
1cupcauliflower florets - cut into bite size piecesrutabaga chunks can also be used.
1/2cupwhipping cream
Instructions
In a sauce pan, add onions, celery, bacon pieces and butter and cook until bacon is cooked and vegetables start to soften.
Add salt, black pepper, cayenne pepper and sprinkle with flour over the top of the mixture.
Stir for a minute then add your clam juice, minced clams and baby clams to the pot and stir.
Bring mixture to a boil and add in the cauliflower florets.
Cook until cauliflower is softened.
Mix in the whipping cream and cook for a few minutes more.
Taste and adjust salt and black pepper if desired, I usually add a little extra black pepper, if you find the soup is too salty, add a little water or extra cream to balance out the soup.
