Keto Clam Chowder

This keto clam chowder is flavor packed and so delicious! It’s also low carb and has the perfect amount of fats to fit a keto diet! Added bonus is that it is quick and easy to make and anyone will love it, low carb or not, it’s truly delicious.

This recipe is full of all the classic clam chowder flavors, clams, bacon, onions and celery and a butter and flour roux. Where we shave off the carbs is by reducing the amount of flour added for the roux so the soup is a little thinner than a traditional clam chowder and instead of using a potato for the bulk of the soup we will use cauliflower florets or you can use rutabaga if you don’t love cauliflower.

I add 3 different clam products for this chowder, the first is clam juice, it makes up the broth of the soup and if you can’t find it you can use chicken stock in it’s place but clam juice really brings the perfect clam chowder flavor. The second ingredient I add is minced clams, these are so you get a little clam in every bite. The third variety I add is the boiled baby clams, this will give you a nice chunk of clam in every few bites. I also add the liquid from each type of clams I use because it’s essentially clam juice.

The carb count on this recipe is right around 6 net carbs per serving, which is perfect for low carb! It also has right around 20 grams of fat and 9 grams protein, making it almost picture perfect for the keto diet ratios. If you want lower carbs you can reduce the amount of onions and flour used in this dish but I think they are perfect flavor wise, in the amounts I have written the recipe with and worth the carbs. However, you can definitely reduce them if you want to.

What you need to make keto clam chowder:

Serves 4

  • 1 cup onions – minced
  • 1 cup celery – diced
  • 1/2 pound bacon -chopped into chunks
  • 2 tablespoons salted butter
  • Pinch salt – more to taste
  • 1/4 teaspoon black pepper – more to taste
  • Dash cayenne pepper
  • 2 tablespoons flour
  • 16 ounces clam juice
  • 2 – 6.5 ounce cans minced clams – juice included
  • 5 ounces boiled baby clams – juice included
  • 1 cup cauliflower florets – cut into bite size pieces, rutabaga chunks can also be used.
  • 1/2 cup whipping cream

Instructions

  1. In a sauce pan, add onions, celery, bacon pieces and butter and cook until bacon is cooked and vegetables start to soften.
  2. Add salt, black pepper, cayenne pepper and sprinkle with flour over the top of the mixture.
  3. Stir for a minute then add your clam juice, minced clams and baby clams to the pot and stir.
  4. Bring mixture to a boil and add in the cauliflower florets.
  5. Cook until cauliflower is softened.
  6. Mix in the whipping cream and cook for a few minutes more.
  7. Taste and adjust salt and black pepper if desired, I usually add a little extra black pepper, if you find the soup is too salty, add a little water or extra cream to balance out the soup.
