Keto Grain Free Granola

This keto grain free granola is super tasty and it has very low carbohydrates. It can also be made vegan and is loaded with lots of seeds, nuts and spices that you will love. You can customize the nuts that go into it so you get your favorites in the mix. This granola takes a little time to make but most of that time is spent baking the mix, actual assembly isn’t too difficult or time consuming.

Where can I find all of these ingredients?

You can find all of the ingredients in stores like Walmart, target and local grocers. I got most of my ingredients at Trader Joe’s and Walmart this time around and I still have lots of extras after making this batch. Health food stores, specifically one with a bulk foods section, can also be the most inexpensive way to buy these ingredients because you will only be paying for exact amounts. With current COVID-19 restrictions I have found most stores have prepackaged bulk items so you can grab a prepackaged bulk bag that is still usually cheaper than another variety.

Why I love this keto grain free granola:

First of all it is delicious and reminds me of those nut carts at fairs or the mall that sell the candied nuts, it has a similar flavor to it and I love it! I have been wanting to add this recipe to my website for a few years now and I am so excited to finally get it on here!

Another reason I love making this recipe is because I have P.C.O.S. (Poly Cystic Ovarian Syndrome) therefore, I have to watch my carbohydrates so my blood sugar levels don’t get too high. I am especially insulin sensitive in the mornings so normal granola can make me sick, even though I love it.

I love breakfast and I love granola, So I am always looking for varieties that I can eat without my blood sugar spiking and honestly it can be really hard to find.

Most granola’s have oats, sugars and dried fruit in them and while I love how they taste I can’t get away with eating more than a tablespoon or two. There are prepackaged grain free granola’s available but some are still be a little high in carbohydrates because of added dried fruit or sweeteners. There are also some keto varieties that I do buy on occasion, however, they can be expensive and you don’t get to customize all of the nuts and seeds in the mix. So these are some of the reasons I love this keto granola!

What you need to make this keto grain free granola:

Makes ~9 cups granola

  • 1/2 cup aquafaba or egg whites – aquafaba is the liquid juices that are found in a can of chickpeas or garbanzo beans, they work very similar to egg whites, I use this in my recipe but you can also use egg whites in it’s place.
  • 3/4 cup monk fruit sweetener – or desired sweetener of choice
  • 1 1/2 tablespoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup almond meal or almond flour
  • 1 1/2 cups raw sunflower seeds
  • 1 cup nuts of choice – walnuts, pecans, cashews, almonds, Brazil nuts – in bite size pieces
  • 1 cup raw pumpkin seeds
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/4 cup melted coconut oil
  • 1 cup unsweetened coconut chips

Instructions

  1. Preheat oven to 300 F.
  2. Add aquafaba or egg whites to a mixing bowl with a whisk attachment.
  3. Begin beating the aquafaba or egg whites until it starts to foam and get frothy.
  4. Add in monk fruit sweetener or sweetener of choice and beat until soft peaks form, about 5 minutes.
  5. Add the cinnamon and nutmeg and whip again for another minute.
  6. Add almond meal, sunflower seeds, nuts of choice, pumpkin seeds, vanilla, salt and melted coconut oil and blend together well.
  7. Reserve the coconut chips for after baking.
  8. Line a cookie sheet with parchment paper or silicone baking sheet.
  9. Bake for 1 hour and 10 minutes, stirring every 20 minutes or so.
  10. The mixture will appear kind of wet still but it is just the oils from the seeds and nuts that will harden up once the granola cools. *If granola doesn’t dry up when totally cooled and feels chewy in texture, place back in the oven and bake for another 15-20 minutes or allow to set out for a day and it will dry out.
  11. After granola is removed from the oven, stir in coconut chips and store in a air tight container or zip top bag.
