Easy Creamy Mushroom Meatballs

Easy and delicious creamy mushroom meatballs. These take minimal effort and come together super fast. You can serve them over rice or cauliflower rice or they are fabulous on their own too.

This dish is perfect for anyone on a keto or low carb diet as well as anyone who isn’t. I like to make this for my family because I can eat it over cauliflower rice and my family can eat it with regular rice and everyone is happy.

You can pick whatever frozen meatballs you like, beef, turkey, pork, vegan, etc. or you can even make your own. I love the convenience of frozen meatballs for this recipe.

What you need to make Easy Creamy Mushroom Meatballs

Serves 2

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cups frozen meatballs of choice
  • 1/2 onion minced
  • 2 cups sliced baby Bella mushrooms
  • Salt and pepper (generous sprinkle of both)
  • Pinch of cayenne pepper
  • 1/4 teaspoon garlic powder
  • 1/4 cup half and half or milk of choice
  • Pinch of flour to thicken it

Instructions

  1. In a skillet, add olive oil and butter and meatballs.
  2. Cook meatballs about 50% or so.
  3. Add onions, mushrooms, salt, pepper, cayenne and garlic powder and cook until onions and mushrooms are softened.
  4. Add half and half and sprinkle in a pinch of flour, sauce will thicken slightly, remove from heat, salt and pepper to taste and enjoy.
