Cauliflower Chicken Alfredo

This cauliflower chicken Alfredo is a delicious and low carb version of a classic chicken Alfredo. This recipe is also really quick and easy to make. It’s perfect for a keto diet or anyone wanting this Italian classic dish without the carbs.

This dish would be perfect with a side salad to make the perfect vegetable packed dinner.

What you need to make cauliflower chicken Alfredo:

Serves 2

  • 1 Steamable bag of cauliflower florets or about 2 1/2 cups cauliflower florets – cooked
  • 1/2 pound chicken tenders
  • Salt and pepper
  • 1 tablespoon minced garlic
  • 3 tablespoons bacon crumbles
  • 1 teaspoon butter
  • 1 teaspoon olive oil
  • 1/2 teaspoon flour
  • 1/2 cup half and half or milk of choice
  • 3 tablespoons Parmesan cheese

Instructions

  1. Steam or cook your cauliflower and set aside.
  2. Season chicken tenders with salt and pepper and cook in a skillet until cooked through.
  3. Remove from pan and set aside.
  4. Add garlic, bacon bits, butter, olive oil to skillet, cook until garlic starts to soften then sprinkle with flour, stir then add half and half or milk.
  5. Add Parmesan cheese, cauliflower and chicken and stir until everything is covered.
  6. Enjoy!
