Kabob Sheet Pan Dinner

This kabob sheet pan dinner can be made on a grill or in an oven. It’s all the flavor you love in a chicken and vegetable kabob without the time and effort of threading everything onto a skewer. It’s so simple and easy to make and I promise that you will not miss the skewers at all.

We serve it over or along side rice for my husband and kids and cauliflower rice for me. You can easily adapt this recipe to include all of your favorite vegetables and leave out ones you aren’t fond of.

Here is what you need to make kabob sheet pan dinner:

Serves 4

  • 1 red bell pepper -cored, cut into chunks
  • 2 cups mushroom slices -I used white mushrooms, baby Bella’s would work too
  • 1 red onion – chunked
  • 2 zucchini – chunked
  • 1 1/2 pounds chicken breast cut into chunks
  • Salt and black pepper
  • Italian salad dressing – pick your favorite brand

Instructions:

  1. Preheat pellet grill or oven to 400 F.
  2. Chop and prep all veggies and meat and lay in sections on a cookie sheet.
  3. Season tops with salt and pepper.
  4. Add Italian dressing on top of everything like you’re topping a salad.
  5. Cook for 30 minutes or until everything looks cooked and good, pull off grill or out of oven, stir veggies and chicken in the juices on the bottom of the pan, it makes a magical sauce on the bottom of the pan with everything’s flavors combined.
  6. Serve on it’s own or on top of or along side rice or cauliflower rice.
  7. Enjoy!
