Cauliflower “Fried Rice”

I love this cauliflower “fried rice” recipe even better than real fried rice because it’s bursting with flavors, is super easy to make, tastes delicious and it’s healthy!

Cauliflower rice is the next best thing since sliced bread! If you missed that reference…. like my little sister who stared blankly ahead at the comment, let me fill you in.

There was once a time when bread was not sold pre-sliced at the store. So then companies started selling sliced bread and it was a hit, who knew! Thus the expression “this is the best thing since sliced bread” was born. Now that I have bridged the generational gap and taught an ounce of history. Ha. Lets all celebrate this beautiful reinvention of the wheel that is cauliflower rice.

What you need to make cauliflower “fried rice”: 

Serves 4 people

  • 2 tablespoons sesame oil
  • 12 ounces frozen cauliflower
  • 1/2 teaspoon garlic powder
  • 1 egg
  • 2 tablespoons soy sauce or 4 tablespoons coconut amino acids
  • 2 green onions
  • 1 cup peas and carrots
  • 1/2 tsp salt – more to taste
  • 1 cup ham – optional

Instructions

  1. Cook the cauliflower rice according to the package directions.
  2. While the cauliflower is cooking. In a separate bowl, egg, coconut aminos or soy sauce with garlic powder and salt. 
  3. Heat a frying pan with toasted sesame oil and dump the cauliflower rice in.
  4. Stir in some frozen peas, carrots, sliced green onions and ham if adding and cook for 4-ish minutes.
  5. Pour the egg mixture over the cauliflower mixture and stir for an additional 3 or so minutes or until the egg is cooked.
