Keto Ranch Chicken Bombs

These keto ranch chicken bombs are super delicious and easy to make! They taste like a chicken ranch bake but they are low carbohydrate and high fat thanks to the almond flour crust and cheesy filling.

These have a mix of ranch dressing, shredded chicken breast, cream cheese and cheddar and then get dipped in eggs and almond flour before baked. They taste decadent and delicious! I like to eat them along side some ranch dressing.

These bake up really great in an air fryer but can also be baked in an oven. The Almond flour crust gets nice and crispy and gives way to soft and cheesy center.

Makes 9 chicken bombs

  • 1 cup shredded chicken – rotisserie chicken, boiled and shredded or canned chicken works great
  • 1 cup cheddar cheese
  • 1/3 cup cream cheese
  • 1 tablespoon ranch dressing
  • dash of black pepper
  • dash of sriracha or hot sauce – optional
  • 1 egg
  • 1 1/2 cups almond flour
  • pinch of salt
  • Spray olive oil for outside of bombs

Instructions

  1. Mix together the chicken, cheddar cheese, cream cheese, ranch dressing, black pepper, sriracha or hot sauce if using it.
  2. Roll into 9 balls.
  3. Add an egg to a bowl and whisk it.
  4. Add almond flour to a bowl and a pinch of salt.
  5. Dip balls in almond flour, then into egg then back into almond flour until ball is coated in almond flour.
  6. Repeat for all of the chicken bombs.
  7. If using an air fryer, bake for 10 minutes at 400 F.
  8. If using an oven, preheat oven to 400 F. and bake for 20 minutes or until outsides are firm and cheese begins to slightly leak out the sides.
