Brown Sugar Banana Muffins

Delicious banana muffins with a depth of flavor from the brown sugar!

Ingredients

  • 5 large bananas
  • 1/2 cup salted butter - melted
  • 1 1/2 cup brown sugar
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon molasses
  • 2 tablespoons espresso powder or Pero coffee replacer or cocoa powder
  • 2 1/2 cups flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons salt
  • 1/2 cup milk
  • optional - ~10 ounces chocolate chips

Instructions

  • Preheat oven to 350 F.
  • In a mixing bowl, add bananas, melted butter and brown sugar and blend together until smooth.
  • Add eggs, vanilla and molasses together.
  • Add the espresso or Pero to the batter along with flour, baking powder and salt and mix.
  • Add milk and blend until smooth.
  • Line muffin tin with muffin liners and add batter to muffin tins.
  • If adding chocolate chips then sprinkle as many as you want on top of the muffin batter and bake for ~18 minutes or until muffins are baked through, check with a toothpick to see if it's cooked through or if the center is risen.
