Ingredients
5large bananas
1/2cupsalted butter - melted
1 1/2cupbrown sugar
2eggs
1tablespoonvanilla extract
1tablespoonmolasses
2tablespoonsespresso powder or Pero coffee replacer or cocoa powder
2 1/2cupsflour
2teaspoonsbaking powder
1 1/2teaspoonssalt
1/2cupmilk
optional - ~10 ounces chocolate chips
Instructions
Preheat oven to 350 F.
In a mixing bowl, add bananas, melted butter and brown sugar and blend together until smooth.
Add eggs, vanilla and molasses together.
Add the espresso or Pero to the batter along with flour, baking powder and salt and mix.
Add milk and blend until smooth.
Line muffin tin with muffin liners and add batter to muffin tins.
If adding chocolate chips then sprinkle as many as you want on top of the muffin batter and bake for ~18 minutes or until muffins are baked through, check with a toothpick to see if it's cooked through or if the center is risen.
