Brown Sugar Banana Muffins

These Brown Sugar Banana Muffins are delicious! They are a favorite among my kids and family and my six year old has even asked me to make them “every single day”. Like the name states these are made with brown sugar which gives them a great depth of rich flavor and really compliments the bananas.

Speaking of bananas this recipe uses a lot of bananas, 5 large banana’s to be exact, which is great for when you find yourself with a bunch of ripe or brown bananas to use up.

I usually love spices in my banana muffins and have plenty of recipes that have spices but these do not have any spices in them, they are all about the banana and brown sugar with a little help from a secret ingredient that amplifies the banana flavors, that secret ingredient is espresso powder or you can use cocoa powder or pero coffee replacer if you don’t drink coffee like me. I always keep pero on hand but cocoa powder also works in a similar way. The bitterness from it intensifies the flavors from the bananas.

These muffins can have chocolate chips added on top or kept plain, they are delicious both ways, though my kids do prefer the chocolate chip ones a little more, I don’t blame them extra chocolate is never a bad thing in my opinion.

What you need to make Brown Sugar Banana Muffins:

Makes 24 muffins

  • 5 large bananas
  • 1/2 cup salted butter – melted
  • 1 1/2 cup brown sugar
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon molasses
  • 2 tablespoons espresso powder or Pero coffee replacer or cocoa powder
  • 2 1/2 cups flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons salt
  • 1/2 cup milk
  • optional – ~10 ounces chocolate chips

Instructions

  1. Preheat oven to 350 F.
  2. In a mixing bowl, add bananas, melted butter and brown sugar and blend together until smooth.
  3. Add eggs, vanilla and molasses together.
  4. Add the espresso or Pero to the batter along with flour, baking powder and salt and mix.
  5. Add milk and blend until smooth.
  6. Line muffin tin with muffin liners and add batter to muffin tins.
  7. If adding chocolate chips then sprinkle as many as you want on top of the muffin batter and bake for ~18 minutes or until muffins are baked through, check with a toothpick to see if it’s cooked through or if the center is risen.
