Keto Baked Mac and Cheese

Decadent, rich and delicious keto style baked mac and cheese

Ingredients

  • 1 large head of cauliflower or roughly 6 cups raw cauliflower - cut into bite sized pieces
  • 1/2 cup salted butter
  • 1 cup cream
  • 4 ounces cream cheese
  • 3 cups shredded cheese - cheddar or a blend
  • 1/2 cup water
  • 1 tablespoon cornstarch
  • pinch of salt
  • 1/4 cup water - to pour over the cauliflower
  • Topping:
  • 1/2 cup almond flour
  • 1/2 cup shredded cheese
  • 1/4 cup parmesan cheese

Instructions

  • Preheat oven to 350 F.
  • Chop up cauliflower into bite size pieces then place into a 9 x 13 baking sheet and add 1/4 cup of water to cauliflower and set aside.
  • In a sauce pot, add butter, cream, cream cheese, shredded cheese and stir until cheese melts, It will stick together and appear thick.
  • Whisk together the water and cornstarch and then add that to the cheese mixture.
  • Add in the pinch of salt and stir.
  • Pour mixture over the cauliflower and stir together.
  • Cover with aluminum foil and bake for 45 minutes.
  • Remove the covering and sprinkle the tops with almond flour, shredded cheese and parmesan cheese and continue baking for 15 more minutes.
  • Broil for 1-2 minutes to get the top browned.
