Ingredients
1
large head of cauliflower or roughly 6 cups raw cauliflower - cut into bite sized pieces
1/2
cup
salted butter
1
cup
cream

ounces
cream cheese

shredded cheese - cheddar or a blend
1/2
cup
water

tablespoon
cornstarch
pinch
of salt
1/4
cup
water - to pour over the cauliflower
Topping:
1/2
cup
almond flour
1/2
cup
shredded cheese
1/4
cup
parmesan cheese
Instructions
Preheat oven to 350 F.
Chop up cauliflower into bite size pieces then place into a 9 x 13 baking sheet and add 1/4 cup of water to cauliflower and set aside.
In a sauce pot, add butter, cream, cream cheese, shredded cheese and stir until cheese melts, It will stick together and appear thick.
Whisk together the water and cornstarch and then add that to the cheese mixture.
Add in the pinch of salt and stir.
Pour mixture over the cauliflower and stir together.
Cover with aluminum foil and bake for 45 minutes.
Remove the covering and sprinkle the tops with almond flour, shredded cheese and parmesan cheese and continue baking for 15 more minutes.
Broil for 1-2 minutes to get the top browned.
