Keto Baked Mac And Cheese

This keto baked mac and cheese is super delicious! It’s completely decadent and comforting but in a low carb and keto way, which I love! The “mac” in this recipe is actually chopped cauliflower, which I find to be a great macaroni substitute.

Make no mistake, this recipe is rich! Creamy, cheese and full of fat, which is why it’s a perfect keto recipe. It can be eaten as a main course or as a side dish. I usually eat it as a side dish because it is so rich.

The topping for this keto baked mac and cheese is made up of almond flour, parmesan cheese and shredded cheese so it gets that signature baked mac and cheese crust on the top.

This recipe does use corn starch in the cheese sauce, the reason for cornstarch is that cornstarch helps break down the cheese so it doesn’t all stick together when you make the sauce so it’s a needed ingredients. It adds a few carbs but they are minimal and necessary.

What you need to make this keto baked mac and cheese:

Serves 6

  • 1 large head of cauliflower or roughly 6 cups raw cauliflower – cut into bite sized pieces
  • 1/2 cup salted butter
  • 1 cup cream
  • 4 ounces cream cheese
  • 3 cups shredded cheese – cheddar or a blend
  • 1/2 cup water
  • 1 tablespoon cornstarch
  • pinch of salt
  • 1/4 cup water – to pour over the cauliflower
  • Topping:
  • 1/2 cup almond flour
  • 1/2 cup shredded cheese
  • 1/4 cup parmesan cheese

Instructions

  1. Preheat oven to 350 F.
  2. Chop up cauliflower into bite size pieces then place into a 9 x 13 baking sheet and add 1/4 cup of water to cauliflower and set aside.
  3. In a sauce pot, add butter, cream, cream cheese, shredded cheese and stir until cheese melts, It will stick together and appear thick.
  4. Whisk together the water and cornstarch and then add that to the cheese mixture.
  5. Add in the pinch of salt and stir.
  6. Pour mixture over the cauliflower and stir together.
  7. Cover with aluminum foil and bake for 45 minutes.
  8. Remove the covering and sprinkle the tops with almond flour, shredded cheese and parmesan cheese and continue baking for 15 more minutes.
  9. Broil for 1-2 minutes to get the top browned.
