Cinnamon Caramel Coffee Cake

Delicious coffee cake with a center filling of ooey gooey cinnamon caramel.

Ingredients

  • 1/2 cup salted butter - melted
  • 1 cup sugar
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoons baking powder
  • 1 teaspoon salt
  • 1 1/2 cups flour
  • 1 cup milk
  • 3/4 cup brown sugar
  • Pinch salt
  • 1/3 cup flour
  • 6 tablespoons salted butter - cold
  • 1 tablespoon ground cinnamon
  • Sprinkle of cinnamon and sugar on top after cake is baked - optional

Instructions

  • Preheat your oven to 350 F.
  • Prepare an 8x8 pan by spraying with nonstick spray.
  • In a bowl, add melted butter and sugar and mix.
  • Add eggs and vanilla and mix together again.
  • Add baking powder, salt and flour into the mixture, followed by the milk and stir together until everything is mixed well.
  • Pour batter into the grease pan.
  • In the same bowl you used for your batter, add brown sugar, salt, flour, butter and cinnamon and mix together with your hands.
  • Pour that mixture on top of your cake batter.
  • Bake for 30-35 minutes or until the center is risen and feel baked, the topping will sink into the cake and create a gooey center and bottom.
  • Sprinkle the top with ground cinnamon and a sprinkle of sugar.
  • Let it cool slightly then enjoy warm.
