Cinnamon Caramel Coffee Cake

This cinnamon caramel coffee cake is out of this world or at least that is how my 4 year old describes it. It’s ooey, gooey and scrumptious! Like the name indicates it’s coffee cake filled with a layer of cinnamon caramel like filling that bakes into the center and bottom of the cake. Making it absolutely delicious!

My little sister, who is 14 years younger than me, asked if I could make her a “unhealthy” coffee cake recipe. I had to laugh because I do have a healthy coffee cake recipe on my website that I believe is delicious but she wanted an extra indulgent version. So I decided I need to make one and delivery on her request.

The cake base for this cake is tender and delicious and marries perfectly with the caramel like filling that is made up of brown sugar, cinnamon, butter and flour. Almost like a crumb coating but the ratios for this recipe work so the layering falls into the cake and creates a delicious caramel like center filling that is so delicious!

If you are only into pretty cakes, this ooey gooey cinnamon caramel coffee cake might not be for you. Ha! In my eyes a beautiful cake is one with a yummy texture and flavor that keeps my fork coming back bite after bite. This cake hits my spot for those two things!

What you need to make this cinnamon caramel coffee cake: (printable recipe is below)

Makes 1 – 8×8 pan

  • 1/2 cup salted butter – melted
  • 1 cup sugar
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoons baking powder
  • 1 teaspoon salt
  • 1 1/2 cups flour
  • 1 cup milk
  • 3/4 cup brown sugar
  • Pinch salt
  • 1/3 cup flour
  • 6 tablespoons salted butter – cold
  • 1 tablespoon ground cinnamon
  • Sprinkle of cinnamon and sugar on top after cake is baked – optional

Instructions

  1. Preheat your oven to 350 F.
  2. Prepare an 8×8 pan by spraying with nonstick spray.
  3. In a bowl, add melted butter and sugar and mix.
  4. Add eggs and vanilla and mix together again.
  5. Add baking powder, salt and flour into the mixture, followed by the milk and stir together until everything is mixed well.
  6. Pour batter into the grease pan.
  7. In the same bowl you used for your batter, add brown sugar, salt, flour, butter and cinnamon and mix together with your hands.
  8. Pour that mixture on top of your cake batter.
  9. Bake for 30-35 minutes or until the center is risen and feel baked, the topping will sink into the cake and create a gooey center and bottom.
  10. Sprinkle the top with ground cinnamon and a sprinkle of sugar.
  11. Let it cool slightly then enjoy warm.
