Breakfast Bake

This breakfast bake is technically a casserole and I love it! I don’t make casseroles very often but they do have there place. This one has an egg and hash brown base, sausage and bacon center, cheddar biscuit top then it gets topped with homemade country gravy. So it’s like combining my favorite savory breakfast items together. I love that I can just throw it in the oven and not think twice about it until it’s cooked and ready to eat. It’s a great breakfast, brunch, lunch or dinner!

What you need to make this breakfast bake:

Makes 1 – 9 x 13 inch casserole – serves 6

  • 9 eggs
  • 1/3 cup milk
  • 1/2 teaspoons salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon hot sauce
  • 3 and 1/2 cups frozen hash browns
  • 1 cup cooked sausage
  • 1/2 cup bacon bits
  • For cheddar biscuit top:
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 4 tablespoons butter – cold
  • 1 cup cheddar cheese
  • 3/4 cup milk
  • For the country gravy:
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions:

  1. Pre-heat oven to 375 F.
  2. In a bowl, add eggs, milk, salt, black pepper, and hot sauce and whisk together until smooth.
  3. Pour into a greased 9 x 13 inch baking dish.
  4. Add hash browns on top of egg mixture.
  5. Add sausage and bacon.
  6. In a large bowl, add flour, salt and baking powder and stir together.
  7. Add cold butter and cut into the dough, so you have pea size or bigger butter chunks in your flour mixture.
  8. Add cheese and mix.
  9. Add milk and mix until a biscuit dough forms.
  10. Add chunks of dough across the tops of the sausage and bacon.
  11. Bake for 1 hour 10 minutes to 1 hour 20 minutes. Loosely cover top after 45 minutes if top is getting too browned. Insert a toothpick in center and when it comes out clean it’s baked though.
  12. While breakfast bake is cooling, on the stove top, add butter, and flour to a pan over medium high heat.
  13. When butter melts and starts to brown, whisk in milk.
  14. Add salt and pepper and bring to a boil until it thickens and a gravy forms.
  15. Pour gravy over the breakfast bake and serve with additional hot sauce.
