Lower Carb Orange Almond Scones

I have an orange and almond scone recipe on here that I absolutely adore, it’s seriously delicious! Anyone who has made it tells me it’s “perfect”. However, I can’t always make that recipe because I am watching my blood sugar levels, so I created this healthier version that is lower carb and honestly still tastes amazing! What you need to make Lower Carb Orange Almond Scones:

Serves 6-8

  • 1 and 1/2 cups almond flour
  • 1 cup flour
  • 1 tablespoon baking powder
  • 1/2 cup sugar
  • 1 tablespoon orange zest
  • 6 tablespoons butter – cold
  • 2 eggs
  • 3 tablespoons orange juice
  • 1/4 cup milk
  • 1 teaspoon orange extract
  • 1/4 cup slivered almonds
  • For the baked on glaze:
  • 2 tablespoons butter
  • 1 teaspoon orange extract
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • pinch of salt

Instructions:

  1. Preheat oven to 425 F.
  2. Combine the almond flour, flour, baking powder, sugar and orange zest together in a large bowl.
  3. Add cold butter into flour mixture and roughly mix it in, until pea sixed for larger chunks of butter are in the flour.
  4. Add the eggs, orange juice, milk and orange extract to flour mixture and stir until well combined.
  5. Dump mixture onto a parchment paper lined cookie sheet and form into a dome.
  6. Add slivered almond on top and all around on the scone dome.
  7. Mix together all of the glaze ingredients and set aside.
  8. Bake scone 10 minutes, then add glaze on top of scones and bake for 10-12 minutes more or until center of scone is cooked and a toothpick comes out clean.
  9. Cut into wedges and enjoy!
