In a microwave safe dish, heat balsamic vinegar and sugar in the microwave for 1-2 minutes or until the balsamic vinegar starts to thicken slightly, set aside.
Remove the pit and skin from the avocado and slice into rings, slices or chunks and place on a plate or in a bowl.
Slice tomatoes and add to dish with avocado.
Add feta cheese.
Sprinkle with salt and pepper to preference then drizzle with olive oil.
Drizzle the reduced balsamic vinegar over the top of the salad and enjoy.
