Tomato and Avocado Salad

This tomato and avocado salad has a harmonious blend of flavors from the tomatoes, avocados, feta and balsamic dressing.

Ingredients

  • 2 tablespoons balsamic vinegar
  • 1 teaspoon sugar
  • 1 avocado - cut into slices or chunks
  • 2 large tomatoes - cut into slices
  • 1/4 cup crumbled feta cheese
  • Salt and pepper to taste
  • ~1 tablespoons olive oil

Instructions

  • In a microwave safe dish, heat balsamic vinegar and sugar in the microwave for 1-2 minutes or until the balsamic vinegar starts to thicken slightly, set aside.
  • Remove the pit and skin from the avocado and slice into rings, slices or chunks and place on a plate or in a bowl.
  • Slice tomatoes and add to dish with avocado.
  • Add feta cheese.
  • Sprinkle with salt and pepper to preference then drizzle with olive oil.
  • Drizzle the reduced balsamic vinegar over the top of the salad and enjoy.
