Tomato and Avocado Salad

I could eat this tomato and avocado salad every single day and never get sick of it. It has a harmonious blend of flavors from the tomatoes, avocados, feta and balsamic dressing.

This salad is super simple and easy to make. If you want it to look fancy it’s easy to do that, like I have done here by slicing the tomatoes into slices, and then cutting the avocado in half horizontally, removing the seed in the middle and then peeling away the peel, then you just slice into rounds and you have cool shaped avocado rings. I place the tomato slices on one side and the avocado slices on the other then fill the center with feta cheese. Add the salt and fresh ground black pepper on top then drizzle with olive oil and your balsamic reduction and enjoy!

Of course this can be made simpler too by chunking up the tomatoes and avocados, adding feta on top, salt and pepper and olive oil and balsamic reduction. It will taste the same this way and it’s a little easier.

What you need to make this tomato and avocado salad:

Serves 2

  • 2 tablespoons balsamic vinegar
  • 1 teaspoon sugar
  • 1 avocado – cut into slices or chunks
  • 2 large tomatoes – cut into slices
  • 1/4 cup crumbled feta cheese
  • Salt and pepper to taste
  • ~1 tablespoons olive oil

Instructions

  1. In a microwave safe dish, heat balsamic vinegar and sugar in the microwave for 1-2 minutes or until the balsamic vinegar starts to thicken slightly, set aside.
  2. Remove the pit and skin from the avocado and slice into rings, slices or chunks and place on a plate or in a bowl.
  3. Slice tomatoes and add to dish with avocado.
  4. Add feta cheese.
  5. Sprinkle with salt and pepper to preference then drizzle with olive oil.
  6. Drizzle the reduced balsamic vinegar over the top of the salad and enjoy.
