Bananas foster baked French toast

rum flavored custard, sourdough bread and of course bananas are in this twist on baked French toast.

Ingredients

  • 1 banana - sliced
  • 3 eggs
  • 1/8 teaspoons salt
  • 2 teaspoons rum extract
  • 2 tablespoons brown sugar
  • 1/2 teaspoons cinnamon
  • 1 cup milk
  • 3 cups sourdough bread - cut into chunks
  • 1 1/2 cups honey bunches of oats cereal
  • sprinkle of salt - or on top
  • 2 tablespoons salted butter
  • 1 tablespoons brown sugar

Instructions

  • Preheat oven to 400 F.
  • In a large bowl, add banana, eggs, salt, rum extract, brown sugar, cinnamon and milk and whisk together.
  • Add the sourdough chunks and stir well.
  • Pour into a greased 8 x 8 pan, top with honey bunches of oats cereal, sprinkle top with salt, top with butter chunks and brown sugar.
  • Bake for 40 minutes.
  • Serve with syrup, whipped cream, fresh banana's or toppings of choice.
