Easy Microwave Scotcharoos

These easy scotcharoos can be made in the microwave and taste super delicious!

Ingredients

  • 10 ounces marshmallows
  • 1/4 cup salted butter
  • 1 cup peanut butter
  • 1/4 cup sugar
  • 5 cups rice crispies

For Chocolate Butterscotch Topping:

  • 1 1/2 cups milk chocolate chips
  • 1 1/2 cups butterscotch baking chips
  • 1 tablespoons salted butter

Instructions

  • In a large microwave safe bowl, add the marshmallows and butter and microwave for 30 seconds.
  • Add the peanut butter and sugar and microwave another 1 minute and 30 seconds or until marshmallows are softened and gooey.
  • Mix together until peanut butter is mixed into the marshmallows.
  • Add the rice crispies and stir together.
  • Press the rice crispies into a 9 x 13 pan then set aside.
  • In a medium microwave safe bowl, add milk chocolate chips, butterscotch chips and butter to a bowl and microwave for 30 seconds, then stir and microwave for another 30 seconds then stir, until the chocolate and butterscotch are melted together and smooth.
  • Pour mixture over the rice crispy mixture and spread until it's smooth and evenly spread.
  • Let the chocolate butterscotch mixture cool and then slice and enjoy.
