Easy Microwave Scotcharoos

These easy microwave Scotcharoos are so yummy! They come together really quickly and are perfect for a no bake dessert!

A scotcharoo is essentially a peanut butter rice crispy treat that is covered in a chocolate and butterscotch chocolate ganache topping. They are super delicious and the perfect blend of sweet and a little salty from the peanut butter.

The chocolate and butterscotch blend together to form a warm and decadent ganache like topping that resembles a thin layer of fudge. So good!

These microwave ones are super easy, don’t require any babysitting over a stove and taste great!

What you need to make these easy microwave Scotcharoos: (printable recipe is below)

Makes 1 – 9 x 13 pan

  • 10 ounces marshmallows
  • 1/4 cup salted butter
  • 1 cup peanut butter
  • 1/4 cup sugar
  • 5 cups rice crispies

For Butterscotch Chocolate topping:

  • 1 1/2 cups milk chocolate chips
  • 1 1/2 cups butterscotch baking chips
  • 1 tablespoons salted butter

Instructions

  1. In a large microwave safe bowl, add the marshmallows and butter and microwave for 30 seconds.
  2. Add the peanut butter and sugar and microwave another 1 minute and 30 seconds or until marshmallows are softened and gooey.
  3. Mix together until peanut butter is mixed into the marshmallows.
  4. Add the rice crispies and stir together.
  5. Press the rice crispies into a 9 x 13 pan then set aside.
  6. In a medium microwave safe bowl, add milk chocolate chips, butterscotch chips and butter to a bowl and microwave for 30 seconds, then stir and microwave for another 30 seconds then stir, until the chocolate and butterscotch are melted together and smooth.
  7. Pour mixture over the rice crispy mixture and spread until it’s smooth and evenly spread.
  8. Let the chocolate butterscotch mixture cool and then slice and enjoy.
