Easy Blender Green Enchilada Sauce

This easy blender green enchilada sauce makes a tasty enchilada sauce in a hurry! It’s perfect for enchiladas, soups, tacos, cooking meat in or whatever you want enchilada sauce for.

I have it featured on my cauliflower enchiladas in this picture. It bakes up great and thickens slightly when it cooks so it isn’t too runny.

You can freeze the enchilada sauce in a zip top bag for future use.

This sauce can be blended up and then frozen for easy sauce later on as well. It will last for about 6 months to a year. So, if you are a garden grower like me and grow green chilies this sauce is a great way to preserve them and use them all year round.

What you need to make this easy blender green enchilada sauce: (printable recipe card is below)

Makes roughly 2 1/2 cups

  • 14.5 ounces chicken stock
  • 4 ounces roasted green chilies
  • 1/2 of an onion
  • 1/4 teaspoon garlic powder or 1 clove garlic
  • 1/4 teaspoon chili powder
  • 1/2 teaspoons salt
  • 1/2 tablespoon cornstarch

Instructions

  1. In a blender, add all of the ingredients and then blend until smooth.
  2. Use and enjoy.
