Avocado And Sundried Tomato Bites

These avocado and sundried tomato bites are delicious, easy to make and a crowd favorite!

Ingredients

  • Flat bread or baguette sliced into ~15 - 2 x 2 inch squares or sliced baguette rounds
  • 1 green onion - thinly sliced
  • 1/3 cup cilantro - chopped
  • 1 large avocado - pit removed and diced
  • 1/3 cup sundried tomatoes - diced
  • generous pinch of salt - more to taste
  • 1 tablespoon olive oil
  • 1 tablespoon sundried tomato oil from the jar of sundried tomatoes
  • balsamic vinegar glaze drizzle on top, if you don't have a premade glaze, you can make your own by adding 2 tablespoons sugar to 1/4 cup vinegar and heating until sugar melts

Instructions

  • If making your own flat bread, make dough and then slice into ~15 pieces, bake and place onto serving dish, if using premade flatbread or baguette, slice and place on serving dish.
  • In a mixing bowl, add green onion, cilantro, avocado, sundried tomatoes, salt, olive oil and sundried tomato oil and mix together.
  • Taste and adjust salt if needed.
  • Spoon mixture onto flatbread pieces or bread pieces and then drizzle each piece with balsamic vinegar glaze.
  • Serve and enjoy.
