Avocado And Sundried Tomato Bites

These avocado and sundried tomato bites make for the perfect party appetizer that every avocado fan will love! They are also easy to make and so delicious!

The combination of avocado, sundried tomatoes, cilantro and green onions with balsamic glaze is a tried and true combo that packs a lot of fresh and delicious flavor into a bite!

I make my own flatbread for these, however, don’t feel obligated to do that! Store bought flat bread or a sliced baguette will work just perfectly too!

If you do want to make your own flatbread, it is super easy to do and will add about 20 minutes to this recipe. Here is my flatbread recipe and one recipe batch of flatbread will make enough for this recipe.

I love to use trader joes premade balsamic glaze, however, if you don’t have a premade glaze, it is easy to make. Just add sugar to balsamic vinegar and heat until the sugar is dissolved, then use and enjoy. The amounts of sugar to vinegar are below in the recipe.

What you need to make these avocado and sundried tomato bites: (printable recipe is below)

Makes roughly 15 bites

  • Flat bread or baguette sliced into ~15 – 2 x 2 inch squares or sliced baguette rounds
  • 1 green onion – thinly sliced
  • 1/3 cup cilantro – chopped
  • 1 large avocado – pit removed and diced
  • 1/3 cup sundried tomatoes – diced
  • generous pinch of salt – more to taste
  • 1 tablespoon olive oil
  • 1 tablespoon sundried tomato oil (from the jar of sundried tomatoes)
  • balsamic vinegar glaze – drizzle on top (if you don’t have a premade glaze, you can make your own by adding 2 tablespoons sugar to 1/4 cup vinegar and heating until sugar melts)

Instructions

  1. If making your own flat bread, make dough and then slice into ~15 pieces, bake and place onto serving dish, if using premade flatbread or baguette, slice and place on serving dish.
  2. In a mixing bowl, add green onion, cilantro, avocado, sundried tomatoes, salt, olive oil and sundried tomato oil and mix together.
  3. Taste and adjust salt if needed.
  4. Spoon mixture onto flatbread pieces or bread pieces and then drizzle each piece with balsamic vinegar glaze.
  5. Serve and enjoy.

Smoked Salmon and Arugula Flatbread

Ingredients

For the Flatbread

  • 1/3 cup water
  • 3/4 teaspoon dry active yeast
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 3/4 cup flour – more for rolling dough out
  • 2 teaspoons olive oil

For the Dill Cream Sauce

  • 1/4 cup sour cream
  • 1 teaspoon dried dill weed or 1 tablespoon fresh dill minced
  • 1/2 teaspoon lemon juice
  • pinch salt

For the Toppings

  • 2 handfuls fresh arugula
  • 1/4 cup smoked salmon – cut into pieces flaked or left in whole pieces
  • squeeze fresh lemon juice
  • drizzle of olive oil
  • Sprinkle of salt
  • Sprinkle of fresh cracked black pepper

Instructions

  • Preheat oven to 450 F.
  • In a mixing bowl, combine water, yeast, sugar, salt, flour and olive oil and mix until a dough forms.
  • Knead for 2 minutes, then let dough rest for 2 minutes.
  • Roll dough into a rectangle at your desired thickness, thinner crust for a crisper flatbread and thicker for a softer flatbread.
  • Bake flatbread for 5-10 minutes depending on how soft or crispy you want your flatbread.
  • While bread bakes, mix together the dill cream sauce ingredients and prepare your salmon.
  • When flatbread is finished baking, add the dill cream sauce, arugula, smoked salmon, squeeze lemon juice over the top along with a drizzle of olive oil and salt and black pepper.
  • Enjoy!
