Almond Poppy Seed Chicken Salad Sandwiches

Calling all texture lovers, these almond poppy seed chicken salad sandwiches are just the thing for you! They are creamy, crunchy, munchie and delicious! They make the perfect summer meal or no fuss dinner!

These sandwiches have tender chicken breast in them. I love the canned chicken breast from Costco or Walmart, or the chopped rotisserie chicken breast or any cooked chicken breast will work great too!

It also has apples, celery, almonds, poppy seeds, mayo, vinegar and seasoning and it’s just a fun and delicious combination.

This will taste great with any bread of choice, I have it pictured on a toasted marbled rye and it was fantastic! However, it would be equally as delicious on a croissant or soft hoagie bun or just on it’s own in a bowl.

This chicken salad is perfect for a picnic lunch, just keep it as cold as you can before dishing it up and enjoy!

What you need to make this almond poppy seed chicken salad sandwiches: (printable recipe card is below)

Serves 2-4

  • 1 – 12.5 ounce can chicken or roughly 1 1/2 cups chopped chicken
  • 1/3 cup mayonnaise
  • 1 tablespoon vinegar – white, apple cider, red wine or white wine vinegar’s will all work
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon sugar
  • 1/2 teaspoon mustard
  • 2 tablespoons slivered almonds
  • 2 stalks celery – diced
  • 1/2 apple – peeled, cored and diced
  • 1 teaspoon poppy seeds
  • Serve on bread of choice

Instructions

  1. In a large mixing bowl, add the chicken, mayonnaise, vinegar, salt, black pepper, sugar, mustard, almonds, celery, apple and poppy seeds and mix well.
  2. Serve on your favorite bread and enjoy.
