Ingredients
3ripe bananas - smashed
1/2cupsalted butter - melted
1/2cupsmooth peanut butter
2cupsflour
1 1/2cupssugar
1tablespoonbaking powder
1teaspoonsalt
2eggs
1cupmilk
1tablespoonespresso powder or pero coffee alternativeoptional, this just deepens the flavor a little
1 1/2cupschocolate chips - I love milk but dark or semi-sweet works too
1/2cupflour
1/2cupsugar
Dash of salt
1/2teaspoonvanilla extract
1/4cuppeanut butter - melted
1/2cupchocolate chips - meltedfor drizzling on top
Instructions
Preheat the oven to 350 F.
In a mixing bowl or blender, add the bananas, butter, peanut butter, flour, sugar, baking powder, salt, eggs, milk and espresso or pero (if using), then mix together until a smooth batter forms.
Add the chocolate chips and stir them into the batter.
Place muffin liners in muffin tin or grease well, then spoon in batter to muffin tin.
In another bowl make the peanut butter crumble topping by adding the flour, sugar and salt together and stirring, then add the vanilla extract and melted peanut butter and mix until a crumble mixture forms.
Sprinkle the crumble mixture over the muffin batter then bake for roughly 20 minutes or until the muffins look baked. Note that these muffins are very soft when they are warm, they firm up when they cool.
Melt the chocolate for the drizzle on top then drizzle on top with a spoon or I use a zip lock bag with a corner snipped to make it look pretty.
